Sugar-free, protein packed twix bars for your tots and you !

This recipe is so good!! And honestly it contains the tiniest amount of sweetener that occurs naturally.There is no reason why you should buy the ready made twix, or similar sweets from the supermarket as we all know how they are packed with preservatives and sugar. Here is how to make your own super healthy twix bars and your tots will not get a sugar rush after eating them.

 

You will need:

 

Bottom /cookie layer

1/2 cup coconut flour

1/2 cup hazelnut meal or almond meal/flour

For sweetness I used a couple of stevia drops but you can avoid completely or ad a teaspoon of honey

2 tbsp coconut oil

 

Caramel layer

1/4 cup raisins soaked in boiling water for 10 minutes and blended with 4tbsp of the water until as smooth as possible

1/2 cup peanut butter

2 tbsp coconut oil

 

Chocolate coating

2 small bars of 70% dark chocolate (I used OMbar) or one big

1/4 cup coconut mil or any other nut milk

1 tbsp coconut oil

 

  • Start by combing the ingredients for the cookie layer. Literally through them all together in a bowl and mix them well  with your hands. It will be quite crumbly and will not come together, that’s ok. After you have a consistent mixture place it at the bottom of a bread loaf pan or any other square shaped pan pressing with your hands si that it becomes nice and smooth. Place in the freezer for at least 10 minutes.
  • Then, add the peanut butter to the raisin-water mixture and combine them really well so that it becomes a consistent paste. Take you cookie layer out of the freezer and top it with your peanut butter- raisin mixture, layering it nicely with a silicon spatula. Place in the freezer for at least an hour or until it is quite hard.
  • Add all the ingredients for the chocolate in a pan and place on a very low heat until it starts to melt and mix them well using your spatula.
  • When your caramel- cookie is ready, take out of the freezer, cut with a sharp knife into bars and drizzle with your chocolate mixture. Place it again for a bit in the freezer if needed, or enjoy instantly
  • YUMM!!!
