This is my go-to recipe for having a “sweet” snack at home. They are so good and so go for you. So it was about time to share this easy recipe that your little ones can enjoy too without eating any junk!
The almond flour makes a great cookie flour and the rest of the ingredients work really nice together. You just need to find some good, really good quality chocolate. SO here we go:
200gr almond flour
60gr good quality, preferably sugar-free chocolate cut in small pieces. I love Ombar.
1tsp cinnamon
1tsp baking powder
2tbs rice malt syrup (or honey)
3tbs coconut oil
1/3 plant milk. I love this epic hazelnut milk
Easy steps, makes about 10 cookies:
Preheat the oven at 180 degrees Celsius.
Mix the almond flour, the baking powder, the cinnamon together and then add the melted coconut oil and the hazelnut milk. Mix really well until you have a cookie dough!
Put the choc-chips and mix a little more. Ready! Make small cookies, starting with a ball at the size of a walnut and press into 1 cm cookies. You can play around with size and thickness and see what you prefer! Then place at a parchment paper lined dish and put in the oven! The will only need 15 minutes so keep watching them until they are lightly browned.
